I will never go back to traditional Eggplant Parm again after having made this recipe twice in one month! I love the crispiness of the eggplant rounds after they've been breaded with panko breadcrumbs and baked.

I haven't yet had the opportunity to make this recipe myself, but I did sample someone else's efforts recently, and, boy, were these poppers scrumptious! Really, what could be better than hot proscuitto and potatoes?
