These burgers were delicious and very spicy! They were a huge hit with my friends and easy to make. I had some problems with shaping the burgers however. The recipe also made more than 6 burgers (about 8). If you don't love spicy food, use less chipotles.

This hummus recipe was pretty good, but not the best I've tried. I made the basic recipe on page 137 and the "Pizza Hummus" variation on page 139. I will be trying it again, but next time adding some Tahini. The recipe made a small batch, so I would double it next time.

This recipe turned out great. You'll want to give yourself extra time to make it as you need to caramelize onions and bake the tofu beforehand. The pizza is even better the next day, cold or reheated. I'll definitely be making this again.

This was very easy to make and turned out delicious. The author recommends soaking the cashews overnight or boil for 10 minutes if you do not have a Vitamix. I soaked the cashews in cold water for about 20 minutes and found that to be just fine. Have not made the garlic bread yet, but I intend to!

This was easy to make and did not require a lot of preparation. It made a great side dish and a lunch the next day. It is better when you let the salad chill in the fridge overnight.

I opted for flour tortillas and vegan cheese instead of cheddar, but these enchiladas were still delicious. They were quick and easy to make. I've made them several times when I need easy lunches made in advance for the week.

This Spanish Rice was delicious and very filling. The author recommends using this as a side dish, but it makes a great main dish as well. It takes a little bit longer to make (about 45 minutes), but does not require your attention the entire time.

These were a huge hit with my friends and I. Just minty enough and very chocolate-y. Instead of using the 1 1/2 teaspoon Ener-G egg replacer and 2 tablespoons water, I used 1 tablespoon of ground flax seed and 3 tablespoons water and it turned out just fine.

Very easy and quick to make, this recipe is great for when I don't have much time to cook. Would recommend to follow the suggestion of using yellow or red bell peppers, instead of green bell peppers.
