Ciabatta

This was the first recipe I tried from this book and it was excellent. I made the poolish version. The crust had a perfect crunch with a nice soft crumb inside. My guests were raving about it and polished off all but two pieces of the three loaves that I made. My nephew ate an entire Ciabetta to himself!
The lift arm had recently broken on my KA and this was the first time I had made bread my hand and it was very straightforward and easy to do.

Italian Bread

Another successful recipe from this book. When my family arrived for dinner and smell bread they were hoping it was the Ciabetta recipe...when I stated I was trying the Italian recipe at first everyone was disappointed. The recipe as followed produced two good sized loaves. One loaf was eaten before dinner even started it was so delicious.
I followed the recipe as directed and would make this bread again. I would recommend a stand mixer due to the volume of dough.

This recipe produces a very tender, delicious cinnamon roll. Since I made them on the spur of the moment I used the skim milk I had in the fridge and the end result was still flavourful. I omitted the lemon and zest because I wasn't in the mood for the flavour of lemon.
I would add more cinnamon and less sugar to the filling the next time I made them as I like a lot of cinnamon. I would also make the rolls smaller. I followed the directions for 8 rolls and they are huge!
I am not a fan of fondant and just put together a simple cream cheese frosting.
If you plan on making these for a family breakfast or brunch follow the directions to make the dough the day before as there are two rises and you will not be eating these rolls in the morning unless you wake up before dawn.
I will try the sticky buns recipe next time.
I returned from walking the dog right after these rolls came out of the oven and my house smells divine.

Mantovana - Olive Oil Bread

This recipe produces the most delicious bread. The crust is exceptional and the interior soft and tender. It is my family's favourite recipe. I have even made it with a few cups of whole wheat flour and my health phobic teenage nephew still ate several slices. If you are a carb addict, make this bread!

Be warned at 5 cups or so of flour you will need a mixer with some decent power or be prepared to knead by hand.

The directions are a bit all over the place as they advice how to make by hand or food processor so you have to read between the lines. I have only made in my stand mixer.

The pages are well worn to this recipe but I am posting just now as I am new to this site.

Chocolate Pudding

I made this as I had bought some whole milk for another recipe I had intended to make and didn't get around to. I had doubled it up to use the milk. I used an extra ounce of chocolate because well I just love chocolate.
The pudding was creamy and delicious but since I was so worried about the milk scalding to my pan (and it did) I cooked it on lower temperatures and it took a lot longer than the recipe stated.
I think the next time I will try the version made with eggs.
On a side note my mother always uses half and half for her pudding and the dish still tastes rich and creamy with the whole milk with a lot less fat and calories!

Ricotta Cheesecake

I have tried ricotta cheesecake at Italian restaurants and always enjoyed the lighter, creamier taste as opposed to the heavy dense taste of a traditional cheesecake.
This recipe didn't disappoint. After reviewing a few other recipes I mixed the ricotta in my KA for several minutes to ensure that the ricotta was free of any grainy texture.
I didn't wrap my springform pan tight enough and the crust got a little soggy. If any one has any suggestions on a best way to do this please share!
I would make this again. I brought to my sister's to cap off an Italian dinner and all enjoyed.

Bananaberry Bombs

These muffins were moist and delicious. You wouldn't guess they had some healthy stuff in them!
I substituted oat bran for the flax as that is what I had on hand.
Since I always share my baking I gave my sister a half dozen to share with her co-workers. They all enjoyed with their morning break, even the office health nut that is a part time personal trainer.
This will be my default muffin recipe.
I am hoping it freezes well as I probably won't share the next batch.

Marla's Maple Pork

Pork and Maple are so good together and this recipe is no different. I normally don't follow savory recipes to the letter but since I was having company I did. The results were perfect.
I added the remaining juices to a small pan and reduced and served alongside as a sauce, it was delicious.
If you are counting calories these recipes are great as the looneyspoons provide details on each recipe.
The leftovers made for a good sandwich!
