Baked Pinto Beans, Enchilada Style from How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food

Made the variation with sweet potatoes. Very easy, very good weeknight dinner. Sweet potatoes need to be baked a little longer before adding beans than specified. 25 min seemed to do it. read more >
