About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Albondigas Soup : page 47

This was so much better than the other recipe I tried using the Mini Bacon Meatballs. I would definately make this one again. I loved how all flavors mingled together to make a very tasty soup. I did serve with the sour cream but left off the cilantro since hubby and son have the soap flavor gene.

Buffalo Chicken "Fries" : page 41

This went great with the mac and cheese on the same page. It has just the right amount of heat. It was easy to prepare and delicious to eat. I know I'll be making this one again.

Mac N' Cheese Soup : page 41

We love mac and cheese and are always willing to try new recipes as well as the ones my daughter does on her own. This one was so good and creamy. With the addition of the chives and blue cheese and some celery in the soup it went great with the Buffalo Chicken Fries on the same page. I know we'll make this again.

Meatball Stroganoff : page 47

This really didn't taste like any stroganoff that I've ever had. I though it was Ok but hubby didn't like it at all and son just thought OK like me. The meatballs were the best thing about it. Hubby didn't like the sour taste from the lemon juice. I'm glad I tried it but don't think I'll make it again.

Mini-Bacon Meatballs : page 46

These are easy to make and bake in the oven. Then you can freeze them in batches for later use in other meals. I made two batches and made the meatball stroganoff page 47 with one batch. The other batch I froze to make the Albondigas Soup also page 47 for another meal. These meatballs would also be good with pasta.
