About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Needed a little something sweet for a snack with my hot tea. Yum! They would also be great for breakfast which is their original purpose. Only 3 ingredients - banana, oats (she calls for quick cooking ones but I use old fashioned and they were still good) and chocolate chips ( I used mini ones).

Love sweet potato fries and usually do in the oven. Found this recipe and had to try it out in my new air fryer. Delicious. I couldn't find my sweet paprika so I used smoked which I love on sweet potato fries anyway. Will be making these again.

These were very tasty scones. I love that they are a little lower in calories. You only use a small amount of butter and buttermilk and applesauce. They are loaded with bits of apple, I used Granny Smith as suggested. Great with hot tea or coffee. They make a nice afternoon snack or a light breakfast. Fall is here.

This was really tasty and good for you to boot. Can't beat that. Even son and hubby enjoyed. I made some oven baked fries and hush puppies to go with.

Skinny Basil Pesto

I had some basil I needed to thin out so I decided to make this recipe. Not only do I like the fact that this pesto is less fattening than most pesto, it's also cheaper to make since you don't need pine nuts. It only has 4 ingredients besides salt and pepper -- basil, garlic, Parmesan, and olive oil. I'll be making this again and maybe even putting some in the freezer for winter.

Skinny Buttermilk Mashed Potatoes with Chives

This was delicious. Only 1 tablespoon of butter in the whole recipe but tasted like more. I think the buttermilk made up for the small amount of butter. I made the Salisbury Steak with Mushroom Gravy from the site to go with. The gravy was fantastic on the potatoes. I just stumbled on this site and I'm in love. As our vegetable I made the Zucchini Parmesan Crisps from The Food You Crave. We had a wonderful low cal supper and hubby agreed it was very good. I did put a bit more butter in his potatoes per his request. He always wants more butter no matter how much you put in the first place.

I did use red potatoes instead of the russets it called for since that's what I had on hand.

I made a half recipe of this for hubby and I. I only used lean ground beef instead of half gb and half turkey. I used cornstarch instead of flour as my gravy thickener. We loved this one. Even our little grand-puppy enjoyed one of these patties. The gravy was delicious over the skinny mashed potatoes from the same site.

Made this one for daughter and I for lunch one day while I was staying with her after the baby was born. I made a half recipe which was to serve 3 but we ate half each. Delicious and loaded with flavor. Loved the Italian chicken sausage in this one.
