About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Spicy Vegetarian Chili : page 106

My daughter and I enjoyed this one very much. We didn't like it quiet as good as some vegetarian chilies we've had but it was till very tasty. It has lots of spices, veggies (even some shredded cauliflower added near the end of cooking time) beans and tomatoes.

We topped it with two of the optional toppings, low fat Greek yogurt and sharp cheddar cheese. It would have also been good with the green onions which I forgot to buy. We liked ours with cornbread crumbled in.

I also didn't have the optional cilantro but know that would have been a great addition as well. May make again and try some more of the add ins and toppings. Great for a winter night.

There is a section in this months issue for some favorite recipes for this time of the year one which is a lighter version. This was the lighter version of chili. It wasn't that spicy though and I should have added another half of chipotle in adobo for our tastes.
