About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Smoke and Pickles: Recipes and Stories from a New Southern Kitchen

While I was the only one in the family who ate this meatloaf as intended with all the components in a sandwich, son-in-law said the meatloaf was delicious and hubby said he didn't like it at all. I enjoyed it both as written in the recipe and alone as leftovers in a plain sandwich and just as a slice of meatloaf. The meatloaf was a bit hard to cut into slices while still slightly warm. I couldn't find the 80% lean ground beef and had to get 85% instead. I didn't have nearly enough drippings that was called for in the black pepper gravy but the gravy still turned out fine. I was delighted to see the author suggests using Dukes mayonnaise since that is what my family loves.

Collards and Kimchi : page 200

I got rave reviews from my family on this one. We all love Kimchi except for my son in law. I used store bought spicy kimchi and bacon fat instead of lard since I was out of lard. Loved the country ham in this one and the onions. All the components made for a delicious broth which we proceeded to drink after our collards and kimchi were devoured. Daughter and hubby said I could make again anytime.
