About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Beef and Hash Brown Casserole : page 20

Son and I enjoyed this one. I did use just onion instead of the vegetable blend recommended since son and hubby don't enjoy celery and bell pepper that much. It made a quick and easy supper.

Build Your Own Burrito Bar : page 49

This such a great idea so I don't know why I haven't done it before. Since daughter was visiting I made both ground turkey and ground beef. I cooked some rice, warmed some black beans, shredded cheese and lettuce and put out warmed tortillas, sour cream and salsa. and we built our burritos however we wanted. Instead of adding a half cup of water to the ground meat, taco seasoning and drained diced tomatoes I just used the drained juice from the tomatoes. I think it gave them an extra boost of flavor. I'll be doing this again.

Chicken Fried Brown Rice : page 34

Son and I enjoyed this very much. We love fried rice and I've made pork fried rice many times but not chicken. We even enjoyed brown rice in this one but the one cup called for wasn't enough so I had to cook a second cup.

My daughter and I loved this salad. It's loaded with flavor from the whole gain mustard, mayo, bacon grease, and vinegar dressing. The flavors of the salad are wonderful too, from the bacon, broccoli carrots and lettuce.

This was great and the only thing I would change is next time I'd use my own corn bread batter instead of the boxed kind which has a little sugar and we prefer our cornbread sugarless. I did use Stubb's original BBQ sauce since she suggested it in the recipe and my this is my son and son-in-laws favorite sauce. I liked the addition of pintos and fire roasted tomatoes in this pot pie. It went great with the collard recipe on the same page.

Double Dr Pepper Cupcakes : page 102

When my hubby flipped though this magazine he said you have to make these. He loves Dr Pepper and he loved these as did the rest of the family except son who doesn't like chocolate. These were super moist and delicious. I know I'll be making these again and again. The reason it's called double is that there is Dr Pepper in the frosting as well as the cupcakes. The frosting is boiled with butter and Dr P and then confectioners sugar is added. You have to let it sit to become thick enough to frost as I did or you can use it like a glaze. Hubby though the frosting was the best thing since sliced bread.

Fresh Tomato Pie : page 77

As I do with all my tomato pies I left in the seeds even though most say to remove them. I did salt and put between paper towels and leave for 20 minutes and blotted off most of the water but even with the seeds I didn't have a watery pie. We loved this version. I did use extra sharp white cheddar but the recipe just stated cheddar cheese. This one was a little different in most of the ones I've tried before as it uses a little vinegar but you don't really taste it.

This slaw was delicious. I could just eat a huge bowl all by itself. Loved the whole grain mustard, vinegar, sugar and oil dressing. The green onions and radishes are a nice addition to the cabbage. Great side for almost any meal.

Pizza Casserole : page 52

If you enjoy pizza and pasta then you'll love this one. In addition to pasta it has pepperoni and ground beef. The sauce is pizza sauce. Italian cheese brings this one over the top. Son and I loved this one and it's great for a work night since it's so easy to throw together. Christy Jordan the author suggests making this one ahead and keeping the the freezer to pop in the oven when you have hungry teenagers.

Quick Collards with Smoked Sausage : page 30

My daughter and I loved these. The smoked sausage was a nice flavor enhancer. We don't usually like vinegar in our greens but it was great in these. This was a great side with the Chicken Pot Pie on the same page.

I made this one down at Dads for my family (hubby, son, daughter, son-in-law, nephew - his wife and daughter, my sister and Dad and also sent some along with the other things I fixed to a neighbour who has been in the hospital and her husband). Everyone who eats beef loved it. Almost everyone peeked in the slow cooker while I was cooking and said this smells great and oh is that little whole mushrooms. They devoured it at supper. Hubby said it was the best roast he's every had.

Stovetop Mac and Cheese : page 73

While this was good my family and I didn't really care for the addition of spicy brown mustard. The recipe works great it was just a taste preference for us. This is the only recipe I've tried from this magazine that we didn't care for.
