About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

I made a half recipe of this for son and I and used 4 boneless, skinless chicken thighs. It was quick and easy and delicious.

Fried Bologna and Egg : page 80

This was a really good bologna sandwich. I used Dukes mayonnaise since that's what I always have on hand and it just so happens there is a jar of Dukes in the picture with MS's bologna sandwich. I used thick cut bologna and loved it with the runny yellow of the fried egg. I didn't have any purple onions on hand so I used vadialia.

Patty Melt : page 88

Even though I bought the wrong bread, sour dough instead of rye, these were delicious. Loved it with the caramelized onions and Swiss. Also liked that the bread was toasted in butter with the burger, Swiss and onions on it so the Swiss was melted nicely. Hoping to try this again soon with rye bread.

Philly Cheesesteak with Provolone : page 58

This one was right up son's alley since he doesn't like green peppers and this one has mushrooms instead of green peppers and it uses thinly sliced rib eye. I bought a package fresh thinly sliced steak but it didn't say if it was rib eye. Hubby and I loved these too.
