About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

The Recipe Girl Cookbook: Dishing Out the Best Recipes for Entertaining and Every Day

My daughter and I enjoyed these. I'm usually a southern slaw dog type girl but these were fantastic. Avocado, tomato, cojita cheese, and a toasted grilled bun. The dog reccomended was Hebrew National or Nathan's. We used Nathans and they were also grilled.

Bacon and Corn Griddle Cakes : page 54

While I'm sure some people would enjoy this recipe and hubby though it sounded good when I read it to him, neither of us liked these. Just didn't think corn, chives cheese, bacon, onions, and maple syrup tasted that good together.

Cinnamon Roll Pancakes : page 51

Hubby and I loved these. I did use her suggestion of making it lighter by using 1/2 whole wheat flour instead of all all-purpose and fat free cream cheese.

We loved these mashed potatoes. Dijon, cream cheese, butter, and green onions give them a nice boost. I used fat free cream cheese.

Make Ahead Overnight Breakfast Casserole : page 40

Every year I make some kind of breakfast casserole for part of our Christmas Breakfast. This is for 2015. We all agreed this one was very good. It had a couple of options for the meat, bread and cheese. I chose to use a Mexican blend for the cheese, French Bread for the bread, and Kielbasa for the meat. Something a little different but a nice touch in this one was a little white wine added to the milk and eggs that is poured over the bread. Also a nice touch was the sour cream Parmesan mixture that is spread over the top during the last 10 minutes of baking.

Manly Man Chili : page 82

This was pretty good but we like other chilies better. Not sure the hot Italian Sausage worked for us in this. We liked the hunks of chuck roast but think it would have been better with some ground beef along with it instead of the sausage.

Meyer Lemon Loaf Cake : page 285

I was craving a little something sweet on this cold snowy day and started thumbing though some of my books when I came across this recipe. I still had some Meyer lemons left so this was perfect. Very good but I would have liked even more lemon flavor in the cake itself. The only lemon there was the zest of two of the Meyer lemons and some lemon extract. The glaze saved the day though since it contained 1/4 cup Meyer lemon juice and some sugar. Holes poked in the cake delivered some of the juicy punch inside.

New England Clam Chowdah : page 73

This was an excellent clam chowder. My whole family loved it. I will be making this again. I used the technique for making the white sauce in a separate pot when I made some of my homemade potato soup recently. Great idea to get it nice and smooth.

Peach and Mango Breakfast Smoothies : page 23

This was a delicious smoothie. I used Low Fat Greek Yogurt. I will be making these again and the strawberry, and blueberry versions with banana as well.

Perfect, Fluffy Pancakes : page 56

These pancakes deliver just as the name suggests. The author says placing the batter in the fridge for 15 minutes is what makes these so great and I agree.

Pumpkin Spice Latte : page 21

Neither daughter nor I have even had a Pumpkin Spice latte and we both enjoy pumpkin things. We decided to remedy that today. Hubby bought me three pumpkins recently from a neighbor who grew them. I cooked up one today and pureed it and then froze most of it for adding to Ruby's homemade dog food. I used some for the recipe in the Recipe Girl's cookbook for the latte. Daughter and I both found out we don't care for Pumpkin Spice Lattes but we're still glad we tried them.
I hate to give this such a low rating since I'm sure there is nothing wrong with the recipe we just didn't like it.
