About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bacon and Fontina Stuffed Mushrooms : page 46

This was part of our 2014 Christmas Eve appetizers and they were delicious. I couldn't find just fontina cheese when I went shopping so I got a bag of mixed Italian Cheeses which had fontina in it. I used baby bella mushrooms for stuffing.

Mashed Potatoes with Cheddar : page 45

These a wonderful. A hit with hubby, son and myself. Loved the extra sharp in this dish. I served with some green beans and Christy Jordan's House Autry Pork Chops. Great, easy, fast supper.

Salisbury Steak Supreme : page 28

A great lighter version of Salisbury steak. I only used the onion in the meat mixture since son doesn't care much for fried onions. On the other hand all three of us love mushrooms so I used extra baby bella ones. Great work night meal with mashed potatoes and green beans.
