About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Big Chewy Apricot and Ginger Cookies : page 184

With three types of ginger - crystallized, ground and fresh along with cinnamon and fresh cracked black pepper these cookies were so good. The apricots lent a nice touch as well. Hubby said with the molasses and sugar it reminded him of ginger bread in cookie form. He even helped me make them. I didn't have sanding sugar for rolling so I used turbinado sugar instead. Results were delicious.

Gingerbread Pancakes : page 197

I love gingerbread but don't make it often. I decided to try these and they were very good. Hubby and I ate pancake syrup on them but think they would have been even better had I had some apple sauce which was on of the suggestions for serving.
