Oven Barbecued Chicken : page 234
We really enjoyed this chicken. I chose to use leg quarters instead of thighs so I added some cooking time. We loved the BBQ sauce - I used a big bottle of Sweet Baby Ray's Original, the peach preserves, garlic and a splash of Brandy.

Peas and Carrots : page 293
These were simple and delicious. Fresh carrots diced, frozen peas, some butter, salt, pepper and herbs. She suggests basil but says you can substitute others so I used parsley. I served it with the Salisbury Steak page 216 and Stovetop Mashed Potatoes page 310

Quick Shells and Cheese : page 214
This is a great homemade version of Velveeta Shells and cheese. Very creamy. At first we though it was going to be to thin but it firms up a bit as it sits. It was definitely a hit at my house. I did use elbows though since that's what I had on hand.

Ready to go Freezer Meatballs : page 102
I usually bake my meatballs in the oven but decided to try this recipe where they are fried in a bit of olive oil. I only made a part recipe for our supper to go in sauce and over spaghetti. These had a few ingredients I'm not used to in meatballs - grainy mustard, and heavy cream. They were delicious though and I hope to make them again and try the BBQ meatball recipe, also from the book. Maybe I'll also try the Swedish Meatballs and the Sweet and Sour ones.

Salisbury Steak : page 216
I haven't made salisbury steak in awhile and this is a delicious version. I served it with the Stovetop mashed potatoes page 310 and peas and carrots page 293. Delicious meal for the cooler weather we're having here.

Stovetop Mashed Potatoes : page 310
Hubby and I loved these as well as the entire meal I made from this book. How can you go wrong with potatoes, butter, milk, a touch of heavy cream, cream cheese and salt and pepper. Yum! I served them with the Salisbury steak page 216 and Peas & Carrots page 293.
