About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

	Mu Shu Pork Wraps From: Cooking Light (reviewed 19th March 2016) Hubby and I loved these. I didn't get napa cabbage so just used regular. Hubby added Siracha hot sauce to his. Quick and easy work night supper and so good.
	Ropa Vieja Empanadas From: Cooking Light (reviewed 21st March 2016) We loved these. The filling is made and chilled and then you make the dough, fill and bake the next day. The olives in them give them a nice flavor. I will be making these again. My first time and I enjoyed making them almost as much as eating them.
	Sweet and Sour Vegetable Escabeche From: Cooking Light (reviewed 21st March 2016) While we enjoyed these we thought the olive oil was a little excessive. If I made these again I'd use a little less. Loved the mushrooms in this though. Was a nice side dish with the Empanadas I made from the same article.
	Whole Wheat Empanada Dough From: Cooking Light (reviewed 21st March 2016) This was an easy dough to work with. It has white wine in it to give it a yeasty flavor. Equal parts all-purpose and whole wheat flour. The recipe is from cookbook author Sandra Gutierrez who talks you though the recipe and made it easy for this first time empanada maker to bake some good looking ones.
	Za'atar roasted Carrots with Labne From: Cooking Light (reviewed 15th March 2016) While this was very good it might have been even better had I remembered to top it with the Greek Yogurt drizzled with olive oil and pepper. It said you could sub that for the labne. I may try making these again with the yogurt.
