Ropa Vieja Empanadas : page 130
We loved these. The filling is made and chilled and then you make the dough, fill and bake the next day. The olives in them give them a nice flavor. I will be making these again. My first time and I enjoyed making them almost as much as eating them.

Whole Wheat Empanada Dough : page 129
This was an easy dough to work with. It has white wine in it to give it a yeasty flavor. Equal parts all-purpose and whole wheat flour. The recipe is from cookbook author Sandra Gutierrez who talks you though the recipe and made it easy for this first time empanada maker to bake some good looking ones.

Sweet and Sour Vegetable Escabeche : page 128
While we enjoyed these we thought the olive oil was a little excessive. If I made these again I'd use a little less. Loved the mushrooms in this though. Was a nice side dish with the Empanadas I made from the same article.

Mu Shu Pork Wraps : page 29
Hubby and I loved these. I didn't get napa cabbage so just used regular. Hubby added Siracha hot sauce to his. Quick and easy work night supper and so good.

Za'atar roasted Carrots with Labne : page 114
While this was very good it might have been even better had I remembered to top it with the Greek Yogurt drizzled with olive oil and pepper. It said you could sub that for the labne. I may try making these again with the yogurt.
