About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Banana Pecan Coffee Cake : page 13

This is amazing and very easy to put together. I did top it with the optional honey bun icing from page 18 which sent it over the top. Next time I would make a half recipe of the icing since don't think it really needed a whole recipe. Good use for very ripe bananas.

Italian Sausage, Spinach, Hominy "Risotto" : page 156

This was amazing. My family loves hominy so I knew we had to try this one and all I can say is Yum! I know this is a strange substitution but I thought I had brandy only to find out after starting to make this that I didn't so I used Tequila instead since that is what I had. Can't imagine it could be any better with brandy, but next time I'll try it. I was afraid hubby might not like it since it had fennel and spinach in it but he enjoyed it as well. I did make a double recipe since I though son was eating with us. So happy I did though since it was so delicious. Recipe says serves 2 so mine should have served 4 but I divided it between three bowls so son could have his when he gets home.

Sausage Cinnamon Rolls : page 9

Made these for Sunday Breakfast. We all enjoyed. Family said they didn't really taste sausage though. Love the cream cheese in the icing.

Toasted Oatmeal Pancakes : page 107

I didn't have steel cut oats so I used the option of whole rolled oats. These were delicious but they made way more servings that the recipe said. I made a half recipe for hubby and I which was supposed to serve 1 1/2 people and be about 7 pancakes, using a 1/4 cup batter. I used a 1/2 cup of batter for each pancake and ended up with 2 huge pancakes each for hubby and I and had enough batter leftover to make several more the same size. I gave the leftover batter to my daughter she made pancakes for her and her hubby as well.
