About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Antipasto Chopped Salad : page 8

Made this for our supper the other night. We all enjoyed it. Perfect for a hot night. Love the artichoke dill dressing. This salad consists of ingredients you usually find on an antipasto platter with the addition of lettuces. I used the romaine called for but couldn't' find radicchio so used a spring mix. Heading states you can add any thing you want but don't mess with the dressing.

Lemony Greek Pasta Salad : page 90

Love that you can make this ahead for work lunches and it's delicious. I made a batch of this and gave my daughter half for her lunches. Taking mine to work and it's great. Dill, feta, kalmata olives, cucumbers, and lemon are great in this.
