About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Baked Cod with a Zesty Crust : page 69

This was such a simple and fast recipe and to top it off delicious too. Hubby and son enjoyed it as much as I did. Great work night supper. I served it with mac and cheese and slaw and had supper on the table in about 20 minutes including prep time.

Grilled Chicken with Thyme and Sea Salt : page 17

I used my cast iron grill pan that my daughter and son-in-law got me for Christmas to make this dish. It was fantastic. Loved the crispy outside thanks to the grill pan.

Roast Cod with Smoked Bacon : page 69

This was great and my son and I really enjoyed it. Since the recipe didn't state whether or not to leave the bacon slices whole I decided to cut my slices in half to make them work a little better in the sauce. Once my bacon was browned I turned off my burner since it stays hot and added the butter and let it melt and get foamy as the recipe suggested. Next I added the lemon juice and parsley and immediately poured over my baked fish. I served it with slaw, baked potatoes and hush-puppies.
