Vegetable Tian : page 146

I am always looking for vegetarian side dishes to add to my buffet because some of my friends like to keep it light or just don't eat meat. This recipe is easy to prepare and hearty enough to be a main course. It can be made a day ahead and served either warmed up or at room temperature.
