This is now my family's favortie sandwhich bread. Having made it many times, it is the highest rising, lightest 100% whole wheat bread I have seen. I've made all of the whole wheat recipes in the book and find this one lighter than the others. I have followed the recipe exactly with excellent results and have varied the procedure some as well (using a sponge) also with excellent results. It's a clear winner for us.

I've made this recipe several times now. For a 100% whole wheat artisan bread, it's light and flavorful. I have been pleasantly surprized considering my past experience with making 100% whole wheat breads. Reinhart's 100% whole wheat sandwich bread in this book is even lighter, but is much more of an enriched bread. Overall, an easy, flexible and delicious hearth bread.

This is a terrific recipe which is very attractive and very tasty. It's a medium difficulty bread (with coffee cake characteristics) and is braided. If using a blender for the frozen chocolate chips and cinnamon, I would not include the butter as it cakes the filling inside the blender. I like to brush the melted butter over the dough and then add the filling. I'll also drizzle any remaining butter over the filling.
