The Bread Bible
By Rose Levy Beranbaum
W.W. Norton & Co. - 2003
As I learned bread making. this book played a major role. It's solid, detailed and full of information on the basics - like how to convert most any recipe to a sponge starter recipe. It's on the technical side which is one reason I liked it; however, this may frustrate some.

The Bread Lover's Bread Machine Cookbook
By Beth Hensperger
Harvard Common Press - 2000
This was my first book on bread making. It not only applied to using my bread machine, but after the machine lept off the counter to it's death, this book continued to serve me with good advice and really, really good recipes. I especially like the Vienna Bread. I frequently adapt the recipes to sponge started recipes. FF
Peter Reinhart's Artisan Breads Every Day
By Peter Reinhart
Ten Speed Press - 2009
I really enjoy the book and have not been disappointed in the recipes and the techniques promulgated here. My favorite recipe for Whole Wheat bread is from this book.
