Not Your Mother's Slow Cooker Cookbook

I have to admit that I didn't make this in the slow cooker. It didn't seem worth it for only 2 potatoes, but I wanted to try the recipe, so I baked it in the oven. It was very good. I would definitely turn to this recipe if I ever wanted to make stuffed potatoes for a dinner party.

Salsa Mexicana : page 241
This makes a good restaurant-style salsa that is useful for enchiladas and burritos. It's probably too thin for dipping. I think the chili powder might be a tad excessive and would reduce the amount I used if I made it again.

Rough Mashed Potatoes with Garlic : page 127
It took a lot longer for the potatoes to get tender than I expected. I think it is easier to make the mashed potatoes on the stovetop and keep them warm in the slow cooker. Good flavor of garlic, though.

Old-fashioned Buttermilk Cornbread : page 235
This is not a slow cooker recipe, but I had some buttermilk to use up, so I thought I'd try it. I thought it was a bit too cakey and sweet. Husband loved it. This would be a good breakfast cornbread. The recipe was very quick and easy to make.

Minestrone : page 63
An easy, adaptable recipe. Just throw in what you have on hand in terms of veggies, beans and pasta, and let it cook. The result is a very satisfying soup and lots of leftovers for freezing.

Easiest Black Bean and Brown Rice Chili : page 230
This recipe utterly failed for me. The rice was not cooked and the rest was blackened. I followed the recipe exactly but there clearly was not enough liquid to cook properly. I had to scrape it into the trash.

Total fail. I don't want to say what the finished product looked like, but it was not appetizing.

Carrot Soup with Honey and Nutmeg : page 83
A good soup, but very thick, almost more of a puree than a soup. Next time I might add a bit more stock. The touch of honey lent a subtle sweetness.
