Easy Cheesy Chili Chicken from Eating Stella Style: Low-Carb Recipes for Healthy Living

My husband enjoyed this a lot. It was easy enough for a weeknight, but I will have to tweak the seasonings some, as it was just a bit too salty for my tastes. read more >

Pure Simple Cooking: Effortless Meals Every Day

By Diana Henry
Ten Speed Press - 2009

21st October 2011 (edited: 9th October 2012)

Baked Sausages with Leeks, Apples and Cider : page 48

I would consider this a quintessential fall dish, warming and hearty. The cider cooks down and makes a slightly sweet glaze that's very good. I did brown the sausages first, which cuts down on the baking time, and I also used regular cider instead of hard cider, with no detrimental effects.

Chicken Baked with Red Onions, Potatoes and Rosemary : page 15

A very simple recipe, good for a weeknight and easy to adapt. Homey one-dish meal. I like to brown the chicken on top of the stove first so that the skin gets really crispy.

Honey and Mustard-Glazed Sausages : page 48

This is a super-simple recipe that is just delicious.

Hot-smoked Salmon, Bacon and Potato Salad with Buttermilk Dressing : page 102

Surprisingly good. I changed this recipe a lot. I thought the proportions were way off. I greatly reduced the amount of dressing to just a thin coating; also reduced the amount of bacon and smoked salad, and I cut out the green beans and watercress altogether. It was intended as a side dish, and I think it worked very well.

Italian Sausages with Purple-sprouting Broccoli, Red Pepper and Penne : page 41

I make this recipe all the time. I always seem to have broccoli and sausages in the fridge. But it's very amenable to adaptations, or to just throwing in what you have on hand. This time I added roasted garlic--yum! Maybe that's why there's a version of it in almost all of my cookbooks.

Tagliatelle with Lemon, Peas and Prosciutto : page 90

This was fine but not great. I felt like the peas and prosciutto got a bit overcooked and colorless once they were added to the sauce, but the lemon flavor was very nice.
