An unusual combination, but it works! When tasked with making a salad from this cookbook in February, I looked for a recipe that would not rely on tomatoes. I'm not much of a potato salad person, but this caught my eye, as oranges are truly in season, and I thought the ingredients were an unusual combination. It turned our light and refreshing -- quite a delight.

Superb flavor and beautiful presentation. I love the look of the red cabbage, and the flavor of apple with sausage and rice was bright and excellent. The dish takes several steps, but none is too difficult.

Sopa de Ajo "Casa Irene" (garlic soup) : page 126
A clear and light garlic soup. Bread slices are browned in the garlic-olive oil mix, and later served with the soup. Bright flavor was excellent and garlic flavor not overwhelming.
