Banana Walnut bread with Flax

Not too sweet, but with a pretty good flavor. However, the recipe is not written well (the flour is never added if you follow the instructions). I had well-aged bananas and too much flax meal (daughter requested then didn't like it), so this recipe seemed to fit the bill. I don't think I've found the perfect banana bread recipe yet.

Roast the beets, marinate in a vinaigrette, toast nuts, sautee the greens very lightly (to wilting), and assemble with goat cheese. Very simple and delicious.

Cranberry Panna Cotta

This seemed like such a good idea - panna cotta without heavy cream (just butter milk) and cranberries for fruit. As written, there isn't enough sugar for the cranberries, especially with the buttermilk. So much tartness, even my sour-loving son didn't think it worked. I nearly doubled the sugar, and also added some salt. I think the recipe would be better with a sweeter fruit. And some heavy cream. Or skip the fruit, and use lemon zest.

Update: As I ate the leftovers for breakfast, I realized that there were few redeeming features of these "desserts", and in fact nobody liked them. So I downgraded the rating to 2.

Tangy Rhubarb Pie

This pie is thickened with tapioca, and the proportions are perfect. Gave a pie with filling that held together without being glue-like. Excellent flavor, not too sweet.
