The major tweak in this recipe is sauteeing the dry cream of wheat in butter before adding the milk. The other difference is more salt than other recipes.

The result is an amazingly rich tasting pudding. The butter flavor really comes through, and its the perfect comfort food for a snowy Sunday morning.

Easy Coleslaw

Tart, sour, and rich all at the same time. I'm super picky about coleslaw, and was surprised at how much I like this one. The recipe includes sour cream, which we just happened to have on hand. It also specified to salt and drain your cabbage for at least an hour. I had only 45 minutes, and so squeezed the cabbage with paper towels to remove some of the water.

This recipe was prepared to accompany this recipe's ribs. A perfect meal after a 6 mile mountain hike.

Masa Cornbread

My cornmeal was full of creepy crawlies, but I still had a hankering for cornbread. My masa came to the rescue with this recipe. I made it pretty much as described, except I used old dried out brown sugar (2T).
The flavor was very different - and the texture was much less crumbly, more like a dense bread.

I think the 2 eggs was 1 egg too many. I will tweak this recipe - I liked the flavor (a bit of tamale-like corn flavor), and fewer crumbs on the floor was a plus for me (but not for our dog).

Using lumpy old brown sugar turned out to be good - every couple bites would give a surprising sweet spot that was enjoyed by most.

Roasted Tomato Salsa

Smokey, spicy, and with great flavor! This recipe is a keeper.

I promised my husband home-made salsa - and enough to last him the winter. It was an easy promise, but I've not been intrigued by many of the salsa recipes I've found. This one, though, was great.

You start off with cutting roma tomatoes in half, and broiling them skin-side up, along with white onion, serrano peppers, and garlic. You leave them in a long time - until the tomato skins are black. Then you whip them up in the blender, add salt, lime, and cilantro. Thats it!

There was good advice on varying the heat. I used two serrano peppers (from my garden). One of them I kept the seeds and membrane, and the other I removed seeds and membrane. I could eat this salsa, but there was enough heat to please my husband.

Savory Cheddar Waffles

This is a basic waffle recipe that includes grated cheddar cheese. It benefits from a very sharp cheese, and I modified it slightly by using coconut oil in place of the butter (and I used a bit less). The waffles came out of the cooker easily, and they smelled and tasted heavenly. I served these alongside a fairly bland healthy lentil-squash dinner that needed something. I think these waffles would also benefit from a bit of siracha or smoked paprika.
