Garlic Dill Pickles

Crunchy pickles with just the right seasonings! These pickles include dill seed, garlic, hot pepper flakes, and black peppercorns. They are distinctive in that half the vinegar is cider vinegar - which gives the final product just a tiny hint of sweetness. The pickles are processed in a hot water bath - which I thought might make them soft - but they came out perfectly!

14-Daughter and I prepared these last September and they have been sitting in our canning cupboard awaiting the store-bought pickles being finished. We only prepared two jars, and one jar disappeared the day it was open. We are thinking that these are good enough to prepare to give to neighbors next year for Christmas.

Green Tomato Chutney

This chutney has an amazing flavor, excellent texture, and it used up a pile of my green tomatoes. I was nervous about the star anise, but it didn't overpower the flavor. My very skeptical husband even gave it two thumbs up! We served this with a roasted pork shoulder, and they complemented each other perfectly.

This turned out so well, its probably gift worthy, though the funny green color isn't so great.

Orange Tomato Jam with Smoked Paprika

Thick and smokey, sweet and tangy - this jam could be classified as a sweet BBQ sauce!

Although the recipe calls for orange tomatoes (and that is what I used), I think this would work just as well with the standard red tomato.

To get the jam to gel, I really had to cook it down a lot. To fit this into my schedule, this jam was prepared on three consecutive evenings - and refrigerated in between. The result is spectacular. Thick, flavorful, and a deep color.

How to use? This is often a problem for me, so this morning I tried toast, spread with this jam, and topped with an egg (over-easy, shown in picture 2). The result was spectacular. The two were an amazing complement.

Variation - I followed the recipe with only one exception, except instead of adding the cayenne pepper, I tripled the ginger.

Yellow Tomato and Basil Jam

Sweet, a great tomato flavor, and with a bold basil base note. The perfect trifecta.

Its that time of year - every night I'm roasting or freezing or simmering -- all to allow me to remember our garden this winter.

Tomato and basil is one of my favorite combinations, and so this recipe caught my eye. It did not disappoint! Lots of tomato, simmered with sugar, lemon juice, and near the end, I added the basil. The picture shows the filled jars prior to processing.
