In a way, this dish was like a Coq au Vin (flambé a chicken, or at least a lot of chicken meat, in one type of alcohol, braise in another), but it just didn't match the taste a Coq au Vin can have - it was too dull, too superficial, nothing happened....

Very nice. Unfortunately the sauce was slightly sour - I suspect that the white wine, which we only later discovered to be too old even for cooking, was the culprit. But it also just might have been too much white wine vinegar.

Very interesting and unusual dressing! It takes a little more effort than the usual dressing - you need to caramelise the sugar, add the other ingredients, dissolve the caramel, puree the whole thing and then season. I used half the amount of mango/orange...
