Very delicious! We used salted peanuts instead of cashews, which worked very well. I missed some sauce to go with the rice, DB did not. Also, although the dish contains quite some mango's, I would serve it with an extra vegetable side dish. I found this dish difficult to locate - maybe Thai, or maybe Caribbean? No idea. Either way, runner beans would probably work well. Be careful that the chicken does not dry out. We used chicken breasts, which works well even though they are prone to dry out; I could also imagine using beef or pork for this dish.
