Spicy muffins with small touches of sweetness.

These muffins came together quickly - bran, whole wheat pastry four, and apple sauce contribute to a healthy muffin. The spices include cardamom, nutmeg, and cinnamon. This is a great spice combination but perhaps there is a bit too much cardamom - it seems a bit too spiced. I substituted currents for the raisins.

I liked these very much, just didn't WOW me enough to go up to a 4. I would consider making these again, mostly because they were good enough and easy to prepare.

I'm not a big fan of cardamom, it's one of those flavours that makes my skin crawl. I might leave it out all together or just use a pinch if I made these.

I read somewhere - cardamom - the new cinnamon. For me it evokes the scents of childhood kitchen - and bread around christmas time. I bought a big bag of it, and so now I'm watching for cardamom recipes.

A friend of mine just called me last week from Italy ( he has a GREAT job that takes him to wonderful places) and he was enjoying octopus carpaccio and cardamon ice cream. And enjoying both.

That's so funny, I'm always running across recipes with cardamom when I want to avoid it and you all love it! Heehee.
