I am not really sure if this is very good or just good ... but I went with very good because I definitely enjoyed this much more than I expected to. I picked this for dinner mainly because I had the ingredients on hand and I wasn't expecting much. But it was really good. The recipe calls for broiling the pancetta briefly but I just microwaved it for a little less than a minute and it worked perfectly. I used some basil mayonnaise and all the flavors worked quite nicely together.

Next time I'd try this with prosciutto because I think the smokiness would go well with the peaches.
