This recipe makes a very pretty bright orange falafel. The recipe is based on one from "Leon: Ingredients and Recipes". Sweet potatoes, chick pea flour, spices and herbs are mashed, made into small patties, and baked. Sesame seeds are sprinkled on top, and I experimented with both standard white sesame seeds and black ones. That combination of black and orange would look great at Halloween.

These were pretty good, but not amazing. I wish I had made the suggested sauce - perhaps they were too dry. I served these with red bell pepper, yogurt, lettuce, in tortillas.

Easy to make, and quick, if the sweet potatoes are already cooked, then it only takes about 10 minutes of prep and 15-20 minutes baking. Simple ingredients, too, I was delighted to find a dinner recipe that didn't require a stop at the store.

A similar recipe is posted on 101 cookbooks, and I provide the link in the "links" tab. The two have a different sweet potato:flour ratio, and the one from 101 cookbooks also includes some oil.
