After reading the comments at The Kitchn website, I decided to make a chicken salad version of this recipe using chopped scallions instead of chives and adding the merest smidgen of tarragon. Like QS, I served this on a ciabatta roll. I wish I'd had a tomato to slice up and add to the sandwich. Still, we liked it very much as a light and healthy summer dinner on a hot day. A well-chilled glass of sauvignon blanc made a nice pairing.

I'm glad you like hearing about the pairings! I do all the cooking but my husband always loves to do the pairing and often calls mid-afternoon just to see what's on the menu so he can start thinking about the pairing.

Sometimes we reverse the process -- he calls and says there's a wine he wants to try, and I start looking for the dish that will work with it.

Your husband sounds romantic and thoughtful! You have a great team. Having the right wine can elevate both the food and the wine, and its a great idea for a direction to progress with food. I'm glad you include that information, keep it up!

There is a restaurant near us that specializes in cheese and wine and they run cooking and cheese-making classes as well. They have a class coming up on pairings with beer that we are going to sign up for in the fall...although I've never been much of a beer drinker. A friend took it last spring and said it was great and she got lots of useful information ... so you may start seeing beer pairings later this year.
