One of my favorite summertime indulgences is a tomato sandwich - with wholegrain bread and mayonnaise.

I first tried making mayonnaise from the Zuni Cafe cookbook during that challenge, and as that review noted, it took me 2 tries to get it to work.

I later found a blender recipe in the New James Beard cookbook, and that review noted that it was salty, but well loved.

But Melissa Clark's article in the New York Times on mayo tricks caught my eye. Here, mixing some water with the egg yolk seems to help the emulsifying step. I had no trouble with this mayo, and it is great with my giant yellow heirloom tomato.
