Mixed cooked grains, dressed with an unusual viniagrette that makes use of tomato juice, provides the major bulk for this salad. In addition, you add fresh corn and cucumber. I also added some edame (because we had it).

A variety of different grains are suggested by the author, including brown rice and quinoa. I used wheat berries (about 3 C) and some leftover basmati rice (1 C).

I was inspired to prepare this salad by @Bab56's review. This tasted light and delicious. I think it will make an awesome lunch for tomorrow.
