This is a lovely stew, was just the hearty start of autumn flavours I was looking for and goes very well with the suggested Orange, Onion and Olive Salad on p58.

I found the couscous instructions overly fussy and couldn't be bothered following them, I just made couscous by soaking it and fluffing with a fork, but it was gluggier than it should have been and is probably much nicer following Marta's method.

The fennel gives a great texture to the stew and elevates is above the typical (but always lovely) combo of chickpeas and greens. I used less than two teaspoons of Harissa because I was using a new brand and didn't know how hot it would be - it's nice to be able to add it to taste later. I'm looking forward to having leftovers of this stew for lunch during the week.
