This salad is fine but probably not something I'd make often. The food processor makes short work of the grating, but then you have to clean the food processor. Also, it makes a lot. I would cut the amounts in half if making this for a light lunch, even though the recipe says it feeds 2 as a snack.

Nice fresh salad. I am thinking of adding a pinch of cumin next time.
