Nothing about this risotto was at all special. Easy to make, but the spinach herb pesto wasn't all that appetizing (spinach, parsley, cilantro, tarragon) and there just seemed to be something missing. So I added salt and doubled the amount of Parmesan...

This is not my favorite wild mushroom risotto --my favorite is the one in Alfred Portale's 12 Seasons cookbook -- BUT, this is a really nice and easy option that takes next to no prep. You just need to allow for the 30 minutes to soak the dried porcini...
