This makes for a nice brunch item and is very adaptable to your taste. I spiced mine up a bit with a little cayenne, extra jalapeno and some oven roasted red peppers, taking it in a bit of a Mexican direction. I also used a mix of sharp and mild cheddar....

I like this recipe because it provides a ratio of eggs to spaghetti that is handy for cutting down the amount to make.

Delicious and easy. We make this to spread on toast and muffins for breakfast. It keeps for 1 week in the fridge. Also makes a nice pie filling.
