Pretty good -- takes less than the 45 minutes the book suggests, 30 minutes tops. Could have used some different suggestions for vegetables; snow peas leave me wanting. I would make this again but try some different veggies, plus ginger and garlic, and use more egg. For a fast, easy, low-fat, inexpensive (if you have all the condiments already) meal this is good, not very special though.

Had this as dinner, but it could easily be an appetizer and would be wonderful for a potluck. Used the aged cheddar I had on hand which was just conventional cheddar; a sharper cheese, like Balderson's Aged White Cheddar would have made this dish phenomenal. I used organic beans and am considering soaking and cooking my own next time instead of using canned. Delicious!

I usually don't eat meat, but my mom gave us some locally raised, organic chicken sausages and I just couldn't say no. This soup was definitely a worthy dish!
I used half as much stock as the recipe called for (12 cups) and used water for the rest. The only other thing I changed was adding a whack of fresh ground pepper at the end.
Next time I would add 1/4 tsp. of crushed red pepper at the beginning, for a little more bite (the sausages I used weren't very spicy).
