I make this recipe several times a month, and eat it for lunch as a salad. I'm indifferent to courgette, so I leave that out. If I can't get the orange sweet potatoes (yams), I use butternut squash instead. These days, I use 2/3 of the spice amounts...

I didn't much care for this. The color is very pretty, but the taste isn't that special and I didn't like the mouth feel much either.

This is wonderful. I usually just use whatever vegetables I have around. I don't always use tofu, I think it's substantial enough without it

The fennel adds a nice touch, but not enough to really lift this out of the ordinary.
