Lamb-Stuffed Eggplant

Not bad - had good flavor.

I had way more filling than I needed, so I cooked that off at the same time in a casserole, and had it available for topping off the eggplant.

Good, speedy dish. Could use a bit more seasoning, but a good base recipe.
