Haricots Verts in Walnut Oil : page 216

This is one of the best recipes for haricots verts; ordinary green beans would work too.

Except for the first few minutes, it can cook along on the back of the stove without much attention, only an occasional stir.

I think the beans take a bit longer than stated to get done, but I just keep them going till they're done. (My DH likes them doner than I do.)

I think the quantity is a bit high. She asks 1-1/2# for 4. I use about 6oz for 2. (I just measured; ordinarily I just grab a handful.) That would mean the recipe serves 6.
