We both liked this a lot --> onto the do-again list. Not wanting to heat the oven on a hot day, I broiled the fish rather than baking. Very tasty and fast.

Cilantro and Lime Salmon

Very good for minimal effort. I had half the salmon, but made all the sauce and tossed the extra with some steamed broccoli. Nice tastes.

A big hit. Fast, easy, tasty, pretty on the plate.

We both thought this was quite yummy.
I made a half recipe:
- Used frozen cooked shrimp, which I just warmed in the skillet with the cajun seasoning.
- The cajun seasoning I used was a cajun rub that I made for something not tooo long ago.
- Used wine for the deglazing.
- Used aillets (young garlic) for the green onions, which aren't available here.
Quick, easy, and very good.

Blueberry Zucchini Bread

A favorite in the zucchini bread class already. Very nice texture and taste. The bit of whole wheat flour was a nice earthy contrast to the sweet. Used frozen shredded zucchini and frozen blueberries.
