Baked Zucchini with Pepper Sauce : page 222

Quite good, for not very difficult. I served with brown rice; it would have been nicer to put the zucchini halves right on the rice for absorbing the extra sauce.

The recipe is supposed to served four and it might, depending on the size of the zukes. I used four zukes (not too big by European standards) and it served two.

Jarred roasted bell peppers are fine. Don't think this is the kind of dish where the do-it-yourself approach adds much. Just use what you've got.

Lemon Spaghetti : page 138

A nice variation on a lemony zucchini pasta dish. The addition of mushrooms was nice.
- I used only 7oz of pasta for two, but made probably 2/3 of the sauce. This was a good amount.
- It might be interesting to cut the zuke into thick matchsticks or some shape more interesting than slices.
- Don't skip the cheese.

Lime-Curry Orzo : page 136

An odd combination, curry spices with olives and feta, but it wasn't too bad at all.
Recipe says it serves 4. I made the whole recipe for 2 (and served with a salad as suggested), and we were not overfilled.
The celery also seemed a bit odd. Something else for texture might be nice. Some cashews perhaps? Plus some finely chopped zucchini for veg then?
I liked it more than DH and might try again.
