Apple Cranberry Turnovers : page 294
This one had a bit of confusing, at least to my daughter and I. We read it to say the phyllo needed to be cut in long strips (long-wise) but when I did that it was hard to get the fruit on and fold. So the next stack I cut the other way and it worked much better and looked more like the ones in the picture. They were quiet good and my picky husband even liked them

Beef and Mushroom Barley Soup : page 89
Even though I liked the Barefoot Contessa's Beef Barley Soup I made awhile back I like this one even better and it's supposed to be healthier. How about that? This one uses stew beef that you brown in a bit of olive oil. You also brown and cook the onions and mushrooms and finally the carrots and celery before adding in the other ingredients.
This is a rich and hearty tasting soup that leaves you feeling full and satisfied. Another perfect winter soup to warm you up. I'll be making this one again.

Fish Tacos with Chipotle Cream : page 229
This was very good but it could have used a bit more marinade I think or maybe just a bit more salt as the fish was a little bland tasting by itself. I enjoyed the chipotle cream and made it with the option of Greek Style Yogurt. I could have added a bit more chipotle for my tastes though. She gives you a choice of using shredded cabbage or lettuce as one of the toppings and I used cabbage. I liked the unusual addition of some cooked corn and the cilantro added a nice brightness. I used tiliapia for my fish choice.

Honey Mustard Sauce : page 200
I needed some honey mustard sauce for a recipe I was making and I remembered this recipe. I recently tried Ellie's Honey Mustard dip from Comfort Food Fix and I loved it. It has whole grain mustard in it. For this recipe I wanted something a little smoother and this worked perfectly. Can't wait to try some of some chicken tenders as well.

Mocha Cake with Mocha Cream Cheese Frosting : page 282
I requested my daughter make this one for my birthday recently. It was very good but just a bit dry. The recipe calls for either whole wheat flour or whole wheat pastry flour. I'm wondering if using the pastry flour would have been better. It has nonfat yogurt in the cake as well as a little butter and canola oil. It does keep in the fridge and seemed to get a bit moister as it sit. The icing is great and not overly sweet. I like the hint of coffee in both the cake and the icing.

Parmesan Mashed Potatoes : page 262
Daughter and I liked these but hubby and son-in-law did not. They both like parmesan and they like the buttermilk mashed potatoes I make sometimes so not sure what it was they didn't like about these. You use buttermilk and nonfat milk mixed together (I used BM and 1% milk) It only has two teaspoons of butter maybe that was what put hubby and son in law off but I thought the other ingredients make up for the lack of butter. The potatoes are steamed instead of cooked in water. This is the first time I'd used that method.

We liked the easy tomato sauce and the portobello mixture with the tomato sauce but the noodles were a bit dry once cooked. We're not big ricotta fans and like our lasagna with cottage cheese most times instead. This might be a bit better that way. Also once rolled and placed in the pan to bake the tops stick up too much I think and got a bit dried out. Maybe we'd have liked this better in shells instead.

Salmon Cakes with Ginger Sesame Sauce : page 226
The sauce for these was delicious as a dipping sauce for snow peas. The sesame ginger also went great with the salmon cakes.

Scrumptious Scramble : page 29
The title of this recipe fits it to a T. It is indeed a scrumptious scramble. I decided to scale this recipe to serve just me. Instead of an egg and an egg white I just used two eggs. I used dried dill since she says either fresh or dried and dried is what I had on hand. I had grape tomatoes instead of a whole tomato so I diced up a few of those and I did have red onion which is what is called for and diced up those. These were delicious and went great with the multi-grain toast spread with Avocado Cream from Comfort Food Fix.

Sloppy Joes : page 91
I love this version of sloppy joes and the fact that it's healthy makes it even more appealing.

Teriyaki Port Tenderloin : page 197
This was very good. I enjoyed the homemade sauce much better than store bought. You need to plan for a little marinating though.

Zucchini Parmesan Crisps : page 251
Even hubby liked these and he's not a big zucchini fan. I loved them. Easy and delicious. Great way to use up zucchini if you grow them. I don't but sometimes my cousin does. Great side to go with almost any meal. I served them with two Skinny taste recipes, Salisbury Steak with Mushroom Gravy and Skinny Buttermilk Mashed Potatoes. Great supper.
