| Quick, easy and healthy breakfast. I didn't have pistachios so I used toasted walnuts instead. I couldn't find my ground ginger so I used a little fresh which I think was probably better anyway. If you have plain yogurt, honey, ginger, nuts and cantaloupe then you're read to dig into this healthy morning treat. |
| This was beautiful to look at and delicious to eat. I did cut my tomato into smaller wedges to make it easier to eat. Since I couldn't find watercress in my local market I got some really good looking argula and used that.
I love the taste of really fresh raw corn and it was delicious in the simple chicken salad. Instead of using rotisserie chicken I cooked my own boneless, skinless chicken breasts in some water and spices.
You wouldn't think the dressing for the chicken would be that good since it's only a small amount of mayonnaise, some juice from the tomato, chives and a little salt and pepper but it's wonderful.
Also you drizzle a little of tomato juice over the greens and with the addition of some fresh cracked pepper and just a pinch of salt, eaten with the tomato and chicken salad it's perfect. Summer's here. |
| My great niece loves onion rings and so do we. For an appetizer on Father's Day we decided to try these baked onion rings. They are crispy and delicious. GN decided they're fantastic and she wants the recipe to try making them (she's 12 and loves to cook). They get their crunchiness from corn flakes and bread crumbs. They're soaked in ice water, dipped in flour, a mixture of buttermilk and flour, then in the mix of cornflakes and bread crumbs. You won't believe they're not fried. |
| Even son and hubby loved these. This is a healthier version of Philly Cheese steaks which are lightened up by using only a fraction of the oil to sauté the red onions, some portobello mushrooms instead of all meat, as well as using a leaner cut of steak.
They also use whole grain baguette's but I couldn't find those so I used smaller sub rolls and scooped out some of the inside bread. I also used only one slice of Provolone for each sandwich instead of the 6 slices suggested for 4 people.
Once you build your sandwich it's slid under the broiler to melt the cheese and toast the bread a bit. I'll be making these again. |
| This one is easy for a hot day since you soak the beans overnight then place in the slow cooker atop some chopped bacon and onions with chicken broth and water to cook. When they're almost done you add a can of fire roasted tomatoes. Not sure why they're called spicy since they don't have any spice at all. I would have liked a little heat in mine but hubby though they were perfect and was even bragging to my cousin how good they were. |
