About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Baked Fruit with Ricotta : page 36

I made this to go along with our breakfast casserole on Christmas morning 2013. We loved the baked fruit. Hubby and son-in-law didn't put ricotta on theirs and son liked it better without. I liked it both ways and plan on making this again. I couldn't find fresh peaches so I used frozen but did use fresh pineapple, pears and granny smith apples. I omitted the allspice since I realized at the last minute I was out but we loved the cinnamon and apple juice in this.

chia pudding : page 29

This was very good. I did use a strawberry Greek yogurt since that's what I had and topped it with the chopped strawberries as suggested. I omitted the toasted almonds. It makes a great filling snack or a nice breakfast.

Oatmeal with Olive Oil : page 34

I don't like sweet oatmeal and usually just eat mine with a pinch of salt and sometimes a scrambled egg stirred in so I knew I had to try this. Love the flavor of the lemon zest and thyme along with a little olive oil in this.
