About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Besciamella : page 67

I made two recipes of this one for each of the lasagnes I made - Pesto and Bolognese. I think this would be great for other dishes as well.

Bolognese : page 66

Used this sauce for the lasagne. I did have to change it a bit since I was out of red wine and couldn't find pancetta or veal. I used an extra pound of beef in place of the veal and just omitted the other two ingredients. I'm sure the wine and pancetta would have been great additions but it was still very good. I had extra so I plan on using it one some spaghetti later in the week.

Lasagne Alla Bolognese : page 65

While this was very good son and I missed the motzarella and cottage cheeses I put in my lasagne. This one only has Parmesan. Besides the Bolognese it has Besciamella.

Pesto Lasagne : page 68

Made this one for my daughter and while she enjoyed it she said she likes the vegetable lasagne I usually make better. I didn't make the pesto from the book though since I don't have any basil growing at the moment and enough from the store to make it was about $50 and two jars were about $4.

Sausage and Beans : page 147

This was excellent. I used mild Italian pork sausages. The recipe calls for 5 fresh bay leaves which I didn't have but I used 1 dry since we are not big on bay flavor. Love that it uses canned cannellini beans. I served it with a tangle of green from Bon Appetit, Ya'll and some corn bread.
